    Here’s a trick I know. Hold the ham inside the plastic cover under hot water in the sink for 30 seconds. It should melt the solid fat bits, and leave you with a fatty juicy slice of ibérico that melts in your mouth. You should worry if those bits don’t melt after all the grease is runny around them.

    Spanish here. Ham can get iridiscent colors because of the curation process. You are mostly fine so don’t sweat it, it looks normal.
