Here’s a trick I know. Hold the ham inside the plastic cover under hot water in the sink for 30 seconds. It should melt the solid fat bits, and leave you with a fatty juicy slice of ibérico that melts in your mouth. You should worry if those bits don’t melt after all the grease is runny around them.
