From reading the article I can see why it is unusual, it reads like an inside job. Someone who worked there or knew the place well. Cattle are only really valuable if you have corresponding paper work that matches their tag. You would need to have a tag that corresponds to the breed, sex and age of the animal if you wanted to sell the animal legally. It is doable and there are farmers who do it but it feels like so much effort, you be spending a lot of time and effort to work the system. Every calf has to have a record of the mother and the department will ask questions like why you need numbers for animals that magically appeared on your farm. Other than killing the animal for meat that is. The whole thing feels personal even.

I’ve only had the occasional Rustlers microwavable burger but know enough to know that you’d make a lot of them with 30k of cattle
