At this point Mercosur should put its foot down and stop trying to negotatiate further. Europe can sign it whenever they feel like, but the deal is as it is today. It’s up to the EU to sort out their priorities and if they indeed want to help consumers.

The reality here is that some EU countries want the deal, and some don’t, no matter what special clauses are implemented. Those that don’t want are strong enough to nuke it, but don’t want to do it openly to avoid antagonizing their members.
Negotiation is pointless, there isn’t enough wiggle room to make anything work.

It makes me really angry to see how powerful farmers are. They make up a tiny part of the economy, live from subsidies from the rest of us, and any time they go to the street the government instantly caves.

France is currently facing large farmer riots but contrarily to what many posts suggests this is not primarily due to the Mercosur trade deal.
There is an outbreak of lumpy skin disease in part of the country, a bovine disease that requires culling the whole herd when a single case is detected.
This is traumatic for the farmers experiencing it. This summer, the Alps were affected badly, now it’s the Pyrenees. While no massive protests erupted in the summer it seems that a lot of disinformation have been circulating to fuel it this time.
So this is the reason France asked for that delay. They want to have the protest under control and don’t want the signature on Saturday to be used as a rally cry that would broaden the protest.
I’m not saying whether this is a good or bad reason, but factually there’s more reasoning than just “France is dragging its feet as always”.

Great news: Europe already has too many foreign dependencies that constrain its geopolitics, and it needs to understand that the 21st century is no longer about trade, but about sovereignty and power. Making us dependent on South America for food is putting yet another chain around our necks. On top of that, it makes no ecological sense: it encourages deforestation of the Amazon and results in a disastrous carbon footprint, not to mention health issues due to much lower standards. This agreement is nonsense.
