How does this work in practice at the airport? Do British passport holders go to the EU line now?

My partner and I recently went to Athens and got stuck in the passport check queue for nearly 2 hours. We watched as each tourist had their fingerprint taken, iris scanned, etc. Probably averaged 3-5 minutes per person. When we finally got to the booth, the staff just confirmed we’d come from London, stamped our passport and sent us on our way. Took all of 30 seconds. We almost begrudged not having the full ‘service’.
