It forces new growth to be sideways not upwards, which is good for fruit and nut trees – no ladder required to harvest them. Stunting growth upwards also makes it less likely to get blown over in strong winds.
But it looks ugly and offers zero shade until new branches and leaves grow back.

Take a photo of the same tree in 2-3 months and you will get the answer

I understand why they do it, but when does it stop? Imagine doing this continuously for 30 years. Can someone give a detailed insight?

Because they pay someone minimum wage to do this. It’s a lazy way to prune when you have no professional tree surgeons involved.

Cause they have no idea what they are doing. If you go around Europe (Germany, thats my example) you’ll understand what proper pruning is.
