Looks like silicone to me.

Depends.
Either Silikon (for wet rooms) or Maleracryl. Probably Silikon since it’s a kitchen.
If you want to repair it you need to remove all of it and then squirt the whole Fuge with new stuff, since new Silikon doesn’t stick to old one.
It’s silicone gout (Silikon Fugen). You get it in a tube at a Baumarkt…
