      There will be regional different names as those regional sausages will be different in taste, ingredients and how they were produced. This sausage could be anything if you dont add where its from. You can’t tell by the looks of it.

      Where I come from this is called „grobe Bratwurst“ or „Hausschlachter Bratwurst“ or „Bratwurst Ring“

    3. In an area in Saxony-Anhalt between Halle and Sangerhausen (Mansfeld Südharz) they call it “Bratwurst”. And yeah I know it seems stupid but that’s what they call it.

      In eastern Thuringia we call that ‘Bratwurst’.

      ‘Knacker’ or ‘Knackwurst’ would be something similar but not in a ring but straight and much harder / dryer. If you keep a Bratwurst long enough in a dry place it will eventually shrivel into a Knackwurst.

      This could be a “Geräucherte Kohlwurst” (Smoked Kalesausage) as well. The one must have item for good Grünkohl ( Next to Rauchende and Luftgetrocknete Kohlwurst)
