
Lo compro da un negozio locale chiamato Feinkost Demir. È etichettato “Paste Paste” e il negozio ha detto che aveva il formaggio di pecora. Ho provato a cercare online una ricetta e non riesco a trovarla. Qualcuno ne sa il nome? Ha l’aglio ed è come un formaggio sparso ma non morbido e cremoso come la crema di formaggio.

I don’t know this particular spread. To me, Pascha paste indicates an arabic/turkish owner/origin.
These pastes are custom made and usually sold in delis.
The paste on your photo looks like the greek dish Tirokaferi ( [https://www.edeka.de/rezeptwelt/rezepte/tirokafteri/](https://www.edeka.de/rezeptwelt/rezepte/tirokafteri/) ) or Chtipiti ( [https://www.essen-und-trinken.de/rezepte/chtipiti-ofenpaprika-feta-dip-12786130.html](https://www.essen-und-trinken.de/rezepte/chtipiti-ofenpaprika-feta-dip-12786130.html) ). Maybe one of these dishes tastes similar. Although they do not contain garlic.

I usually use this:
Dried tomatoes in oil
Feta (use real feta!)
Garlic
Salt pepper
Get the tomatoes out of the oil, peel garlic and everything in a mixer, then add the feta and mix again. You can add some salt and pepper but be aware, feta is already quite salty. Usually you don’t need any salt or just a tiny amount.

Is it okay to name it Pascha Pasta?
It looks like “Acılı” we call it in my region. That’s a Turkish breakfast sauce but although it’s called that in my region, unfortunately, I don’t know the names used in other regions.
