– Meglio prenotare in anticipo a stazione / qualche giorno prima?

Whether or not you book ahead mainly depends on whether you plan on travelling by ICE, so a fast train. If you do, booking early and actually booking specific seats will usually guarantee your those seat (though things can happen to change that). If you travel by RE, so a regional train that stops more often, there’s not real reason to book early. ICE takes just over an hour, RE just under 2 hours.
For a trip as short as that I’d never pick first class, it’s pointless. I’ve traveled with school groups and we always managed to find enough room for our luggage. Just buy some snacks at the train station and bring them on board. Train food usually isn’t great anyway.
If you pick RE and travel after 9am you can get Bayernticket which will be your cheapest option. It’s valid all day and for 5 people costs 72€. Isarcard is mainly interesting for people who travel in and around Munich regularly.
You should look at getting a Bayern Ticket. It is valid for all regional and local transport for one day in Bavaria from 9am on weekdays, or all day on a Sat/Sun/public holiday. You can get the Ticket for up to five people when you book it, so just get two of those. You have to put the names of all travellers on the ticket(s). There are direct RE trains from Nürnberg to Munich, or with one change in Treuchtlingen. There should be some space for your bags on those trains, too. There is no such thing as checked luggage on trains.
Get them on the day you’re travelling from Nürnberg to Munich, and then again for the trip to Salzburg. They’re valid to Salzburg Hbf, just not in Salzburg itself.
On other days, get an isar card for within the greater Munich area.
DO NOT GET ANY DEUTSCHLAND TICKET! That is an individual subscription, that each person would have to get on their own, and also have to cancel themselves. Bad idea for a group of ten people.
