It looks like they kinda tried to make a sandwich cake. But used maybe mozzarella, bell peppers and rucola instead of the usual stuff. Also possibly foccacia as the base instead. So honestly not sure. But definitely something I could imagine being served as a appetizer or party snack here.

No idea what that is; at first from the thumbnail I thought it was a [Smörgåstårta](https://sv.m.wikipedia.org/wiki/Sm%C3%B6rg%C3%A5st%C3%A5rta) but it looks far too weird to be that.

That looks Mediterranean inspired. The bread, using ruccola&basil, fruits&tomatoes on some kind of cream cheese, balsamico and probably olive oil etc…
