I don’t think it’s a huge issue for supermarkets. Bacon isn’t the only thing they base their business model on and they will just sell whatever people eat instead of bacon.

I wondered why I was seeing nitrate-free bacon on Sainsbury’s. Knew there would be a reason for this being specified.

I don’t know why more don’t sell guanciale, it’s made without nitrates and it’s much tastier than bacon or pancetta for cooking, not as good for sarnies though.
