      Technically you can eat the rinds of almost every cheese, it just tastes horrible almost every time.

      Nope… you don’t eat any crust of any hard cheese. Only exception is Raclette Cheese… but you can eat most crusts of soft cheeses….

    3. Cheese is brought to maturation with time in cellars, the « crust » is the outer part of the cheese and could have a strong moldy taste so you wouldn’t want to eat it but it’s comestible. Some people keep them in the fridge to use them scrapped in soups to give some taste.
