Sono appena tornato da una meravigliosa vacanza a Cipro. Questo è stato di gran lunga il miglior spuntino che ho avuto in hotel. Ho cercato ricette per provare a realizzarne alcune io stesso nel Regno Unito, e tutte richiedono la farina del villaggio. Quale sarebbe l’equivalente qui? Grazie!

      You should be able to find cypriot village flour in the UK as well, especially london.

      However, if you can’t looking at the ingredients for this:

      I would go with durum flour.

      Also Pitta tis Satsis, would translate to saj pie. Saj being the cooking device, (it’s basically an upside wok).

      In some places Pitta tis Satsis, is also called Kattimeri (tis Satzis) which comes straight from the Turkish katmer ( [https://en.wikipedia.org/wiki/Qatlama](https://en.wikipedia.org/wiki/Qatlama) )

      Pretty sure it’s just durum wheat flour. 

      It’s often sold as pasta flour (which may or may not be mixed with normal wheat flour to different extents, but the packet should tell you).
