Not at all to be discouraging, but most of the black and rye bread recipes out there are the like the current top comment where it’s like 100-150g of leaven. Why not an exact amount? ¯\_(ツ)_/¯ What’s leaven even? Oh you take some bread and some sour milk and mix them together and let them sit for a few days. How much of each? How many days? How long does it last? What should I do with it meanwhile? What if I don’t already have bread? ¯\_(ツ)_/¯
You don’t already need bread to make leaven, but the recipes sometimes make it sound like you do, so start with that. Just look up how to make it from scratch and that you need to “feed” it. It’ll get easier when you already have the starter. Keep in mind that the amounts of ingredients are often inexact, especially if you’re used to baking by following an exact recipe and the result is different, as on your picture. Those are all bread, but the texture and taste are different based on the *amounts* of ingredients, since the ingredients themselves are largely the same. So just experiment and have fun. And most importantly document things as you go. Otherwise you’ll make the perfect bread and be mad at yourself if you forget how much of what you put in it.
