I don’t think it’s about anything in particular, I think the joke is that you wouldn’t expect Yoda to have a last name, let alone an ‘exotic sounding’ last name. Now Family Guy has done a few more Armenian jokes. One had Peter list all famous Armenians (the joke being there are only 3), one a character saying that they own a nightclub for Armenians, and one with a cutaway about an Armenian child, where the little child has the voice and chest hair of a grownup and asks to buy a business and covert it into a car wash. There is one more in a DVD-only scene where an uber driver is named Armen. I suspect this is just because the writers of the show are in LA, and interact with plenty of Armenians.
Edit: thanks for the reminder, there was another one where stewie is annoyed at the Armenian neighbor for being loud and having too much cologne, and the neighbor offers him “weird food stuffed in weird leaves”…

It’s usually something like someone on staff or something has that last name and they go with it as a joke.
