Recipe:
500g (about 9oz) Syr (farmers cheese)
4 eggs
3 Tablespoons sugar
¾ teaspoon baking powder
½ teaspoon salt
¾ cup + 2 Tablespoons flour
We mixed it together with a stand mixer, you want the cheese to break apart. The consistency should be slightly sticky. Drop a small amount (about 2 Tablespoons) onto a plate with flour and coat gently so you can form the syrniki. Fry on medium low heat in oil until browned on both sides. Yield was about 20 syrniki. Serve with a fruit compote.

I was kinda lukewarm on syrnyky until I tried salty version with dill and garlic. Love them now and never returned to the sweet version.

My MIL made the best syrnyky. Really light.
