I made a big pot of [Zaporizhzhian Kapusnyak](https://www.reddit.com/r/ukraine/comments/1i5hlne/748_am_the_sun_is_rising_over_kyiv_on_the_1062nd/) to warm the family. Pork ribs simmered slowly, then combined with cooked sauerkraut and celery and sauteed root vegetables (carrots + parsnips + potatoes.) These were recombined with with the pork broth. Fluffy cooked millet added to the stew for body.
I minced salo (cured pork fatback) and ground it in the mortar with plenty of garlic and parley for a garnish. A Tbsp of this added at serving time melted magically into the soup. Also, a dollop of smetana/sour-cream (not pictured.) It was great with fresh baked bread. I was lucky that my wife made several loaves that day. Great for dipping!
Smachnoho!
And as always, Slava Ukraini!
