They trialled this in cork recently.

Bare Food is great, would definitely go there for dinner.
Il Forno opens till 10pm most evenings anyway I think? Hope it goes well and they can make it work long term.
Even the pubs aren’t what they used to be, 79 on West St. Closed a little while ago and I think they were down to Friday and Saturday before the end. Place on Peter’s St is closing in a few weeks too. There’s maybe 10+ gone in the last 20 years.
2 night clubs are Friday and Saturday too. Years ago a Thursday and Sunday would have been a reasonably busy night out. Now only 2 or 3 places are doing any decent trade during the week and weekends are not what they used to be outside of the bank holiday weekends maybe.
I like a quiet pint the odd mid week but I don’t like sitting in a totally empty place either.
