Sensible given these hackers can’t be trusted to restore the data/not publish the data anyway.

It’s been best practice in Web Security to never pay ransomware for close to a decade.
So much for the “we won’t negotiate with terrorists” stance.
Every time I see a story about the state of Cybersecurity in the UK it makes me want to weep. We have all the resiliance of a mayfly. It’s no wonder every country on earth including people from within are hacking us left, right, and center. Thank Zeus so many in the tech industry have good moral values, because the way businesses, corps, government and bodies treat their responsibilities, I’m genuinely shocked the nation is still functioning.
