It is a kind of pasta, its called “trahanas” and this specific variety is the traditional, only from wheat (though not the most common nowadays, the flour “sour” variety is more common)
I ate tons of traxanas (let’s call it dry wheat) all my life. usually I was just boiling it in water and then added olive oil, slices of turkey ham and various cheese while still hot from the boiling. then a lot of black pepper and couple slices of charred bread.
